Dr. Camel has been a Registered Dietitian for over 35 years with a history of advanced clinical practice prior to moving into her academic career. She has published in the areas of nutrition assessment, education of health professionals, health disparities, interprofessional education, breastfeeding, college student health issues, food security, and medical nutrition therapy. She has mentored numerous student research projects and managed accredited programs in dietetics. Her travels work in settings with diverse patients have created a love of cultural foods and their impact on populations.
